The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions far back into ancient history, certainly as far back as the ancient Egyptians, and potentially, even further back. Interesting though that maybe, mostly, these early records were just primitive hieroglyphic instructions for preparing food.
Interestingly, the oldest recipe discovered, according to historians are some clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. As we move into The time of the romans 25BC a roman called Apicius assembled a number of documents describing recipes cooked by wealthy roman citizens. In his publication, Apicius tells us how the meals were divided into hors d`oeuvre, main course and desserts, something that is very familiar to us today. He also recounts how the early Romans were skilled in the use of a wide range of spices, including some familiar names such as thyme, mint and asafoetida. Closer to modern times, there were a couple of interesting recipe books published in the fourteenth century : one book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, these are not about the indian curry that appears on menues today, but instead recipes for the types of meals eaten by the rich. Later, in the 15th century, knights returning from the crusades brought back many foods and spices from the holy lands, including spices like parsley, basil and rosemary. These new foods and spices prompted a torrent in books on cookery, some of which are kept safe in private libraries. Like it or not, the introduction of TV brings us cooking programs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to access massive numbers of recipes just like those on this recipe site. |
