The History of Recipes
It is quite feasible to prove the history of recipes way back into history, in fact as far into history as ancient Egypt, and potentially, even further back. Interesting though that maybe, generally, these early recipes were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the oldest recipe found, according to food historians is a collection of tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. As we move into Roman times around 25BC a roman called Apicius compiled a few documents detailing recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into starters, main meal and dessert, something that is very familiar to us today. Aspicius recounts how the Roman chefs were skilled in the use of a wide range of spices and herbs, including many that are still in use today for example bay, fennel and dill. Later, in the 15th century, people returning from the crusades brought us a variety of foods, spices and herbs from the East, including spices such as parsley, basil and rosemary. These new foods and spices was responsible for an explosion in recipe publications, some of which still exist in private cookery archives. During the following few centuries, the rich and powerful families of Europe competed to serve up the most exotic banquets, and as a result chefs and their collection of recipes could command a high salary. Nevertheless, it was during the 19th century that haute cuisine and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and recording the recipes of their peers. Like it or not, the introduction of TV brings us TV cooks and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, allowing us all to access massive numbers of recipes just like those on this recipe site. |
