The History of Recipes
It is quite feasible to trace the history of written cooking instructions back into ancient history, at least as far back as early Egypt, and possibly even further. In practice though, in the main part, these old cook books were just very basic hieroglyphic instructions for meal preparation.
As we move into The time of the romans 25BC a man called Apicius created a number of scripts detailing recipes cooked by wealthy Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into starters, main course and dessert, something that is very familiar to us today. Aspicius recounts how the Romans used many different herbs, including a few that are still present in modern kitchens for example thyme, rue and dill. During the next few hundred years, the rich families of the West competed to serve up the most extravagent meals, and as a consequence, chefs and their recipes became highly prized. Notwithstanding that, it was during the nineteenth century that fine cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collating, verifying, and recording the recipes of their peers. Like it or not, the introduction of TV brings us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to search through thousands of recipes like those on the site you are now reading. |
