The History of Recipes
We can follow the history of `recipes` back into ancient history, at least as far as the Egypt of the Pharoahs, and possibly even further. However, these, early records were just simple pictorial recipes for preparing meals.
In fact, the oldest recipe in existence, according to Professor Solomon Katz, is a series of tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. Progressing into The time of the roman empire 25BC a man called Apicius created some documents describing recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the meals were separated into hors d`oeuvres, main course and dessert, a very modern way of dining. Aspicius also recounts how the cooks of his times were skilled in the use of many different spices and herbs, including many that are still in use today for example bay, fennel and parsley. For the centuries that followed, the rich families of the West competed with each other to serve up the most extravagent banquests, and as a consequence, cooks and their collection of recipes were highly sought after. Nevertheless, it wasn`t until the nineteenth century that formal cookery and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, testing, and recording the recipes of their peers. The introduction of the TV brings us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes like those on this recipe site. |
