Ingredients
2/3 package frozen spinach (10 oz pkg)
4 cup all-purpose flour
4 eggs
Directions
Recipe by: Northern Italian Cooking Cook spinach according to package
instructions. Drain thoroughly. Squeeze spinach to remove as much
moisture as possible. Chop spinach very fine. Put flour on a pastry
board and make a well in the center. Break eggs into well; beat with
a fork. Add chopped spinach and beat to combine. Continue as for

The History of Recipes
Written cooking instructions as a concept can be found way back into history, at least as far back as the Egypt of the Pharoahs, and possibly even further. In practice though, sadly, these old cookbooks were just basic hieroglyphic recipes for preparing meals.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, are a few tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. As our culinary historical trip moves to more modern times there were two recipe books published in the 1300s - one book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, they are nothing to do with the indian curry that we all know today, but rather accounts of the types of food eaten by the rich people of that period. Over the following few centuries, the rich and powerful families of Europe competed to serve up the most extravagent banquests, and as a result chefs and their recipes were highly sought after. Notwithstanding that, it was during the 1800s that fine cooking and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and recording the recipes of their peers. When we get to the 1900s, cookery publications are in great demand, as a result of increased literacy, more spare time and being a little richer. The arrival of TV brings us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to search through massive numbers of recipes just like those on our site. |
