The History of Recipes
Transcribed cooking instructions as a concept can be found back into antiquity, in truth as far into history as the Egypt of the Pharoahs, and possibly even further than that. However, sadly, these old cook books were just very basic hieroglyphic recipes for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to academics are some clay tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful. Progressing into Roman times around 25BC a roman called Apicius created a number of documents which described recipes cooked by wealthy roman citizens. In his works, he tells us how the roman meals were separated into hors d`oeuvre, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Roman cooks were skilled in the use of a wide range of spices and herbs, including a few you will know like basil, mint and asafoetida. Later on in the 1400s, people returning from the crusades brought us many new foods and herbs from Arab countries, including spices such as coriander, parsley, and basil. These new foods and spices prompted a surge in manuscripts on food, the majority of which are kept safe in private libraries. For the centuries that followed, the families of Europe tried to offer the most exotic meals, and as a consequence, chefs and their recipes increased in prestige. Nevertheless, it wasn`t until the 1800s that formal cookery and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them. The introduction of the TV gave us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the internet revolution, permitting everyone to access massive numbers of recipes just like those on this site. |
