The History of Recipes
Food historians have tracked the existence of recipes way back into history, in truth as far into history as ancient Egypt, and maybe even further. Interesting though that is, these, early recipes were just very basic pictorial instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered so far, according to experts is a collection of stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire 25BC a roman called Apicius compiled a collection of scripts which described recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. Aspicius recounts how the chefs of Roman times were skilled in the use of many different herbs and spices, including a few that are still present in modern kitchens like bay, rue and dill. As our culinary historical trip moves to more modern times there were two interesting recipe books which date from the 1300s : a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the spicy food that is popular today, but instead recipes for the types of meals on the tables of the nobility of the period. In the 15th century, knights returning from the crusades brought back many new spices and herbs from middle-east cuisine, including spices such as parsley, basil and rosemary. The introduction of these new culinary ideas caused an explosion in books on cooking, many of which are kept safe in private collections. The introduction of television brings us celebrity TV chefs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, allowing everybody to access massive numbers of recipes like those on our web site. |
