The History of Recipes
It is quite feasible to follow the history of written cooking instructions back into the far past, at least as far into history as the ancient Egyptians, and maybe further still. However, mostly, these old records were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
During Roman times 25BC a man called Apicius created some documents showing how to cook the recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and dessert, something we still use today. Aspicius also informs us how the chefs of Roman times were skilled in the use of a good variety of herbs and spices, including a few that will be familiar to modern cooks for example basil, rue and dill. During the succeeding few centuries, the rich families of the West strove to serve up the most extravagent banquests, and as a result chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe books became popular. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, verifying, and publishing recipes of the day. Like it or not, the introduction of television brings us TV chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes such as those found on our web site. |
