The History of Recipes
It is possible to follow the history of meal recipes way back into ancient history, in fact as far back into history as pharonic Egypt, and maybe further still. However, in the main part, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
In fact, the most ancient recipe found, according to historians are a few ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. Later, we have some books which were published in the 14th Century : one book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, they have no connection with the indian curry that appears on menues today, but rather descriptions of the types of food eaten by the rich people of the time. Later on in the 1400s, knights returning from the crusades brought us a variety of foods and spices from the East, including basil and rosemary. These new herbs and spices led to an outbreak in books on cooking, some of which are now in academic collections. For the decades that followed, the rich families of Europe strove to serve the most extravagent meals, and as a result the best cooks and their collection of recipes were greatly in demand. Nevertheless, it was during the 1800s that fine cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, trying out, and publishing recipes for their fellow cooks to enjoy. By the time we get to the 20th century, cooking publications are greatly in demand as a result of increased literacy, more leisure time and having more money. The arrival of television brought us TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes just like those on sites such as the one you are reading now. |
