The History of Recipes
It is possible to read the history of written recipes far back into the far past, certainly as far as the ancient Egyptians, and quite possibly further than that. Having said that, mostly, these early cook books were just primitive pictorial instructions for preparing meals.
Later on, in The time of the roman empire 25BC a roman called Apicius created a number of documents detailing recipes prepared by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were separated into starters, entrees and dessert, a very modern way of dining. Additionally, he describes how the ancient cooks were skilled in the use of a good variety of aromatic flavours, including a few that will be familiar to modern chefs like thyme, rue and parsley. Later, in the fifteenth century, people returning from the crusades brought us a variety of spices and herbs from Arab cuisine, including spices like parsley and basil. The introduction of these new foods and spices was responsible for an outbreak in publications on food, the majority of which are now in private cookery archives. By the time we get to the 1900s, cookbooks were highly popular mostly due to higher levels of literacy, people having increased free time and disposable income. |
