The History of Recipes
Written recipes as a concept can be tracked back into distant history, certainly as far back into recorded history as the Egyptians, and possibly even further. However, these, early recipes were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the oldest recipe discovered, according to academics are some stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. Progressing into The time of the roman empire around 25BC a man called Apicius compiled some documents detailing recipes enjoyed by wealthy Romans. In his works, Apicius tells us how the meals were separated into starters, main course and afters, something we still use today. Aspicius informs us how the ancient chefs used a good variety of aromatic flavors, including a few you will know like basil, mint and dill. In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from the holy lands, such as coriander, parsley, and basil. The introduction of these new foods and spices was responsible for an increase in manuscripts on cookery, many of which are kept safe in private collections. Over the following few centuries, the wealthy families of Europe competed to serve the best banquets, and consequentially cooks and their recipes were much in demand. Nevertheless, it was during the nineteenth century that cooking and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, trying out, and writing down recipes to help cooks of their time. By the arrival of the twentieth century, recipe books were highly popular due to better eduction, more spare time and having more disposable income. |
