The History of Recipes
It is quite possible to trace the history of recipes way back into history, in fact as far into history as the Egypt of the Pharoahs, and possibly even further. Interesting though that maybe, in the main part, these early cookbooks were just basic hieroglyphic recipes for food preparation.
The truth of the matter is, the most ancient recipe found, according to experts in ancient history is a series of clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As we move into Roman times around 25BC a roman called Apicius wrote some documents which described recipes enjoyed by the Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into starters, main meal and afters, something we still use today. Aspicius also recounts how the ancient cooks were skilled in the use of a good variety of aromatic flavors, including some familiar names such as basil, rue and dill. During the following few centuries, the powerful and wealthy houses tried to serve up the best banquets, and as a result the best chefs and their collection of recipes increased in prestige. However, it was during the 19th century the formal cooking and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, verifying, and recording recipes for their fellow cooks to enjoy. By the advent of the twentieth century, recipe publications were greatly in demand mostly due to more people being able to read, increased leisure time and having more money to spend. |
