The History of Recipes
It is quite possible to track the history of written cooking instructions back into antiquity, in truth as far back as the Egyptians, and possibly even further than that. In practice though, mostly, these early records were just simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe in existence, according to Professor Solomon Katz, are a few clay tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. Progressing into The time of the romans around 25BC a man called Apicius compiled a collection of documents which described recipes cooked by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into starters, main course and afters, a very modern way of dining. Additionally, he informs us how the ancient Romans used many herbs and spices, including a few that are still present in modern kitchens for example bay, fennel and asafoetida. Moving on, there are two books from the 14th Century - a recipe book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are a little misleading though, they are not about the spicy food that we all know today, but rather accounts of the types of meals prepared for the rich people of that time. Later, in the 15th century, the Crusaders brought back many new foods, spices and herbs from Arab cooking, such as coriander, parsley, and rosemary. The introduction of these new tastes was responsible for a torrent in manuscripts on cookery, the majority of which are now in private cookery archives. By the time we get to the twentieth century, cooking books were starting to become popular due to more people being able to read, people having more free time and being a little richer. |
