The History of Recipes
It is quite possible to trace the history of recipes back into distant history, certainly as far back into recorded history as early Egypt, and quite possibly further than that. However, in the main part, these old recipes were just primitive pictorial recipes for meal preparation.
Interestingly, the oldest recipe in existence, according to experts are a few ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. During Roman times 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes prepared by the Romans. In his works, he describes how the meals were split into starters, main course and afters, a very modern way of dining. Aspicius tells us how the ancient chefs were skilled in the use of many aromatic flavours, including a few that will be familiar to modern chefs for example thyme, fennel and asafoetida. Closer to modern times, we have a couple of cookery books which were published in the fourteenth century : a recipe book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, they are not about the curry that we all know today, but rather descriptions of the types of meals served to the rich people of that period. In the fifteenth century, knights returning from the crusades brought us a variety of foods and herbs from Arab cooking, including spices like basil and rosemary. These new herbs and spices was responsible for an increase in manuscripts on cooking, the majority of which are now in academic collections. By the arrival of the 1900s, recipe books were highly popular mostly as a result of more people being able to read, people having increased free time and disposable income. Like it or not, the introduction of television brought us TV cooks and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes like the ones you can find on our site. |
