The History of Recipes
It is possible to follow the history of `recipes` way back into antiquity, certainly as far into history as the Egyptians, and quite possibly further than that. Interesting though that is, these, early records were just primitive pictorial, hieroglyphic or cunieform instructions for preparing meals.
Later on, in The time of the romans around 25BC a roman called Apicius compiled a number of documents describing recipes cooked by the Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into starters, main course and afters, a very modern way of dining. Aspicius tells us how the chefs of Roman times were skilled in the use of many herbs and spices, including some that we all recognise such as thyme, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought us many foods, spices and herbs from middle-east cuisine, including spices like coriander, parsley, basil and rosemary. The introduction of these new culinary ideas was responsible for an increase in manuscripts on cookery, most of which are now in academic collections. The arrival of television brings us cooking programs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes like the ones you can find on our web site. |
