The History of Recipes
Historians have tracked the existance of recipes way back into distant history, in fact as far as the ancient Egyptians, and potentially, even further back. Interesting though that is, sadly, these old cook books were just very simple hieroglyphic recipes for food preparation.
Fascinatingly, the most ancient recipe found, according to food historians are a few clay tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. During the time of the Roman Empire a roman called Apicius compiled a collection of documents showing how to cook the recipes prepared by wealthy Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into appetizers, main meal and desserts, something we still use today. This early Roman chef describes how the chefs of Roman times used a wide range of spices and herbs, including a few you will know like bay, mint and dill. In the fifteenth century, knights returning from the crusades brought back many new spices and herbs from the Middle-East, including spices like coriander, parsley, basil and rosemary. These new foods and tastes created an eruption in books on cooking, many of which still exist in private cookery archives. The introduction of television brings us celebrity TV chefs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to search through thousands of recipes just like those on this site. |
