The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into ancient history, certainly as far back as the early Egyptians, and maybe further still. Interesting though that maybe, in the main part, these early recipes were just simple pictorial recipes for preparing food.
Interestingly, the oldest recipe found, according to experts in ancient history is a collection of stone tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Progressing into The time of the romans around 25BC a roman called Apicius compiled some scripts detailing recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the cooks of Roman times used many different herbs, including some familiar names like basil, mint and parsley. During the next few hundred years, the rich and powerful families of the West competed to serve the most extravagent banquests, and as a result the best chefs and their recipe collections increased in prestige. Notwithstanding that, it wasn`t until the 19th century that cookery and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collating, verifying, and writing down recipes that were common in the better off homes of the day. By the advent of the 1900s, cookery books were highly popular as a result of increased literacy, people having increased spare time and a general increase in wealth. Like it or not, the introduction of TV gave us TV cooks and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes like those on this web site. |
