The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions far back into the distant past, at least as far back as the early Egyptians, and potentially, even further back. However, sadly, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for preparing food.
In fact, the oldest recipe found, according to historians is a collection of stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. Later on, there were two recipe books dating from the fourteenth century ; one book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, these are not about the indian curry that is familiar to us all today, but instead recipes for the types of meals enjoyed by the rich people of the period. Later on in the 1400s, people returning from the crusades brought us a variety of spices and herbs from the East, including spices like rosemary and coriander. These new foods and spices caused an increase in books on cookery, many of which are kept safe in private collections. For the next few years, the upper classes competed to serve up the most exotic banquets, and as a result the best chefs and their recipe collections were much in demand. Nevertheless, it wasn`t until the nineteenth century that fine cooking and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to assembling, verifying, and publishing recipes common in their social group. By the advent of the twentieth century, cookery books are highly popular mostly due to increased literacy, people having increased leisure time and having more money. The introduction of the TV gave us TV cooks and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to search through thousands of recipes just like those on this web site. |
