The History of Recipes
Experts have traced the existance of recipes way back into the far past, in fact as far as the Egyptians, and possibly even further. Interesting though that is, in the main part, these early records were just very simple hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe discovered so far, according to historians are a few tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. During Roman times 25BC a man called Apicius created some scripts showing how to cook the recipes prepared by the Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into starters, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the ancient chefs were skilled in the use of a wide range of spices, including a few that are still present in modern kitchens like basil, fennel and dill. Closer to modern times, we have a couple of books from the 1300s : one book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are somewhat misleading tho`, they are unconnected to the indian food that is served today, but instead descriptions of the types of food eaten by the rich and powerful of those days. In the fifteenth century, knights returning from the crusades brought back many new foods, spices and herbs from middle-east cuisine, such as basil and rosemary. These new foods and tastes was responsible for a torrent in recipe manuscripts, the majority of which are kept safe in academic collections. During the succeeding few centuries, the upper-class families of Europe strove to lay on the best banquets, and because of this cooks and their collection of recipes were much in demand. However, it was during the nineteenth century that haute cuisine and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, testing, and recording recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking books are starting to become popular due to higher levels of literacy, more free time and having more money. Like it or not, the introduction of television brings us celebrity TV chefs and the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting us all to access massive numbers of recipes just like those on this web site. |
