The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions far back into ancient history, at least as far as the Egyptians, and possibly even further than that. Having said that, sadly, these early records were just primitive hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe found, according to Professor Solomon Katz, are a few stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Progressing into Roman times around 25BC a roman called Apicius created a collection of documents describing recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and afters, a very modern way of dining. This early Roman chef informs us how the cooks of Roman times used a wide range of herbs and spices, including some that we all recognise for example bay, mint and parsley. Later on, there were two interesting books from the 14th Century : one book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, these books have no connection with the curry that we all know today, but rather descriptions of the types of meals eaten by the upper classes of those days. Later on in the 1400s, people returning from the crusades brought us many foods, spices and herbs from the Middle-East, such as basil and rosemary. These new foods and spices created an outbreak in manuscripts on cooking, most of which are now in academic collections. The introduction of the TV gave us cooking programs and the spin-off recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes just like those on our web site. |
