The History of Recipes
We are able to follow the history of written recipes back into the far past, at least as far into history as early Egypt, and quite possibly further than that. In practice though, generally, these early cookbooks were just basic pictorial recipes for food preparation.
The truth of the matter is, the oldest recipe discovered, according to academics are some tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. Later on, in The time of the roman empire around 25BC a man called Apicius created a number of scripts detailing recipes cooked by the Romans. In his publication, Apicius recounts how the meals were separated into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the cooks of Roman times made use of a good variety of aromatic flavours, including a few you will know such as bay, rue and parsley. During the following few hundred years, the rich families of the West competed to offer the most extravagent meals, and consequentially the best cooks and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and cookery books really came of age. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, trying out, and publishing recipes for their fellow cooks to enjoy. By the time we get to the 1900s, cooking publications were in great demand, mostly as a result of better eduction, more leisure time and having more disposable income. The arrival of television brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to search through massive numbers of recipes such as those found on our site. |
