The History of Recipes
Historians have proved the existence of recipes back into the far past, at least as far into history as pharonic Egypt, and maybe even further. Having said that, mostly, these early cook books were just primitive hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the oldest recipe discovered so far, according to experts in ancient history is a series of clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Progressing into The time of the romans 25BC a man called Apicius created a number of documents detailing recipes cooked by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and afters, a style of dining still practiced today. This early Roman chef describes how the Roman chefs were skilled in the use of a wide range of spices, including a few that will be familiar to modern cooks like thyme, rue and asafoetida. In the 15th century, knights returning from the crusades brought us many foods and herbs from middle-east cuisine, including spices such as coriander, basil and rosemary. The introduction of these new foods and spices created an explosion in manuscripts on cookery, many of which are now in academic collections. Over the next few centuries, the rich families of Wesstern Europe competed to offer the most extravagent meals, and because of this chefs and their recipes increased in prestige. Notwithstanding that, it wasn`t until the 19th century that cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to assembling, testing, and publishing recipes to help cooks of their time. The introduction of television brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing us all to access thousands of recipes just like those on this web site. |
