6 tsp applesauce, unsweetened
1/4 cup water -- 120 deg. f.

The History of Recipes
Transcribed cooking instructions as an idea can be found back into the distant past, certainly as far into history as the early Egyptians, and quite possibly further than that. Interesting though that is, these, old cookbooks were just very basic hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe found, according to academics are a few clay tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. Progressing into Roman times 25BC a man called Apicius assembled a number of scripts describing recipes cooked by his fellow Romans. In his works, he recounts how the meals were split into starters, main meal and dessert, a style of dining still practiced today. Additionally, he recounts how the ancient Romans were skilled in the use of many different aromatic flavours, including a few that will be familiar to modern chefs for example bay, rue and parsley. Over the succeeding few hundred years, the powerful families of Wesstern Europe competed with each other to lay on the most exotic banquets, and as a result the best chefs and their recipe collections were much in demand. However, it was during the 19th century that fine cookery and recipe collections really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, trying out, and publishing recipes of the day. When we get to the twentieth century, recipe publications were in high demand, mostly due to increased literacy, people having increased free time and having more disposable income. |
