The History of Recipes
Written cooking instructions as an idea can be found far back into ancient history, at least as far back into history as pharonic Egypt, and maybe further still. However, generally, these ancient records were just primitive hieroglyphic instructions for preparing meals.
As we move into The time of the roman empire around 25BC a roman called Apicius created a collection of documents describing recipes prepared by wealthy roman citizens. In his publication, he recounts how the meals were divided into hors d`oeuvre, entrees and dessert, a very modern way of dining. Aspicius describes how the Romans used a wide range of herbs, including a few that will be familiar to modern cooks such as basil, mint and dill. In the 15th century, people returning from the crusades brought us many foods and herbs from the holy lands, including coriander, parsley, and basil. These new foods and spices prompted an outbreak in publications on food, the majority of which are kept safe in private collections. When we get to the 1900s, cookery books are in great demand, mostly as a result of better eduction, people having more leisure time and disposable income. |
