The History of Recipes
We can follow the history of meal recipes far back into antiquity, at least as far back as the early Egyptians, and maybe even further. Having said that, sadly, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for preparing food.
During Roman times around 25BC a man called Apicius compiled some documents which described recipes prepared by his fellow Romans. In his works, Apicius tells us how the roman meals were divided into appetizers, main course and dessert, a style of dining still practiced today. Aspicius informs us how the Romans were skilled in the use of a good variety of aromatic flavors, including some familiar names such as thyme, rue and dill. In the fifteenth century, knights returning from the crusades brought us many new foods, spices and herbs from the East, including spices like basil and coriander. The introduction of these new herbs and spices led to an increase in recipe publications, many of which are now in private cookery archives. By the arrival of the 1900s, recipe books were increasing in popularity due to increased literacy, people having increased spare time and a general increase in wealth. |
