The History of Recipes
Written cooking instructions as an idea can be observed far back into the distant past, certainly as far into history as pharonic Egypt, and quite possibly further than that. Having said that, generally, these old cookbooks were just simple pictorial instructions for food preparation.
Progressing into The time of the romans around 25BC a man called Apicius created a number of documents describing recipes prepared by wealthy Romans. In his scrolls, he tells us how the meals were split into hors d`oeuvres, main course and desserts, a very modern way of dining. Aspicius also recounts how the Roman cooks were skilled in the use of a good variety of spices and herbs, including a few that will be familiar to modern chefs like basil, mint and dill. Later, in the 15th century, knights returning from the crusades brought us many foods and spices from Arab cuisine, such as rosemary and coriander. The introduction of these new herbs and spices created an increase in recipe books, most of which are kept safe in private cookery archives. Like it or not, the introduction of TV brings us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to access massive numbers of recipes such as those found on this site. |
