The History of Recipes
It is quite possible to track the history of transcribed cooking instructions way back into distant history, at least as far back into recorded history as early Egypt, and maybe further still. Interesting though that maybe, these, ancient recipes were just very simple hieroglyphic instructions for preparing meals.
The truth of the matter is, the oldest recipe found, according to Professor Solomon Katz, is a collection of stone tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. As we move into Roman times around 25BC a roman called Apicius assembled a number of documents describing recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals were divided into hors d`oeuvre, main course and dessert, something we still use today. Aspicius also informs us how the early Romans made use of a wide range of spices, including some that we all recognise like basil, mint and parsley. During the following few centuries, the upper-class families of the West competed with each other to serve up the most extravagent meals, and as a result the best cooks and their collection of recipes were highly sought after. Even so, it wasn`t until the nineteenth century that haute cuisine and recipe books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, testing, and writing down recipes that were common in the better off homes of the day. The introduction of the TV brought us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes like the ones you can find on the site you are now reading. |
