Bernie's Fudge Recipe


Ingredients

1 can evaporated milk
1/2 cup butter, or margarine
3 2/3 cup sugar
1 1/8 cup brown sugar
13 oz hershey milk chocolate (candy bars)
2 oz bakers unsweetened chocolate
1 tbsp vanilla extract
32 large marshmallows
1/2 cup chopped nuts, (optional) or more nuts


Directions

COMBINE BUTTER, SUGAR AND MILK IN A LARGE PAN AND STIR UNTIL
DISSOLVED. STIR A FEW TIMES UNTIL IT COMES TO A BOIL. COVER AND LET
BOIL FOR FIVE MINUTES WITHOUT STIRRING. REMOVE FROM HEAT. ADD
MARSHMALLOWS AND STIR UNTIL DISSOLVED. ADD CHOCOLATES, ONE AT A TIME
UNTIL MELTED. ADD VANILLA EXTRACT AND NUTS. POUR INTO A LIGHTLY
GREASED TEN BY FIFTEEN INCH PAN. REFRIGERATE AND CUT INTO SMALL
SQUARES.

The History of Recipes

Recipes as a concept can be tracked far back into the distant past, in fact as far back as ancient Egypt, and possibly even further. Interesting though that is, sadly, these ancient recipes were just basic hieroglyphic instructions for meal preparation.

In an interesting twist, the most ancient recipe discovered, according to Professor Solomon Katz, are some tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`.

Much later, in Roman times a roman called Apicius created a collection of scripts showing how to cook the recipes cooked by the Romans. In his scrolls, he describes how the meals were separated into appetizers, main meal and desserts, something that is very familiar to us today. Aspicius also describes how the ancient cooks used many different spices and herbs, including a few you will know for example bay, fennel and asafoetida.

Continuing our culinary historical journey, there were some interesting books which appeared in the 1300s - a recipe book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are unconnected to the indian curry that appears on menues today, but instead descriptions of the types of meals prepared by the chefs of the upper classes of the period.

Later on, in the 15th century, people returning from the crusades brought us a variety of foods and herbs from the holy lands, including spices such as coriander, parsley, and rosemary. These new foods and tastes created an eruption in recipe books, some of which are now in private collections.

The TV revolution gave us TV chefs and the recipe books that accompanied them.

Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes like those on this site.
