The History of Recipes
Recipes as an idea can be tracked far back into the far past, in truth as far back into history as the early Egyptians, and quite possibly further than that. In practice though, generally, these early cookbooks were just very basic pictorial recipes for preparing food.
In an interesting twist, the most ancient recipe discovered so far, according to experts is a collection of clay tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Progressing into Roman times 25BC a roman called Apicius created some documents which described recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals were separated into hors d`oeuvres, main course and afters, a very modern way of dining. Aspicius also tells us how the cooks of his times made use of many aromatic flavors, including some that we all recognise for example thyme, rue and dill. Continuing our culinary historical journey, we find a couple of interesting cookery books dating from the fourteenth century : a recipe book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these books are not about the curry that we all know today, but rather recipes for the types of meals prepared by the chefs of the rich and powerful of that time. Later on, in the 15th century, people returning from the crusades brought back many new foods, spices and herbs from Arab cuisine, including spices like parsley, basil and rosemary. These new culinary innovations caused an increase in manuscripts on cooking, the majority of which still exist in private collections. The TV revolution gave us celebrity chefs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
