The History of Recipes
Written cooking instructions as an idea can be found way back into distant history, certainly as far back as ancient Egypt, and maybe further still. Interesting though that maybe, mostly, these old cook books were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
As we move into The time of the roman empire around 25BC a roman called Apicius assembled a few documents describing recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the roman meals were divided into hors d`oeuvres, entrees and dessert, something that is very familiar to us today. He also describes how the early Romans made use of many spices, including many that are still in use today such as bay, fennel and dill. Over the next few hundred years, the upper-class families of Wesstern Europe competed with each other to lay on the most exotic meals, and as a result the best cooks and their collection of recipes increased in prestige. Even so, it wasn`t until the 1800s that formal cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, testing, and recording the recipes that were being prepared for the better households. The arrival of TV brings us cooking programs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on this recipe site. |
