The History of Recipes
We are able to follow the history of meal recipes back into history, in truth as far back as pharonic Egypt, and maybe further still. Interesting though that maybe, these, early cookbooks were just primitive hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to experts is a collection of clay tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. Later on, in The time of the roman empire around 25BC a man called Apicius compiled a few scripts which described recipes cooked by his fellow Romans. In his scrolls, Apicius tells us how the roman meals were split into starters, main meal and dessert, a style of dining still practiced today. This early Roman chef describes how the cooks of his times were skilled in the use of a wide range of herbs and spices, including some that we all recognise like basil, mint and asafoetida. Later, in the fifteenth century, the Crusaders brought back many new foods and herbs from middle-east cuisine, including coriander, parsley, basil and rosemary. The introduction of these new herbs and spices was responsible for an eruption in publications on food, many of which still exist in private cookery archives. The arrival of television brought us celebrity TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to access thousands of recipes just like those on our web site. |
