The History of Recipes
Historians have tracked the existence of recipes far back into history, certainly as far into history as the ancient Egyptians, and maybe even further. Interesting though that maybe, generally, these old recipes were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
As we move into The time of the romans 25BC a roman called Apicius created some scripts detailing recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were split into starters, entrees and afters, a style of dining still practiced today. This early Roman chef describes how the Romans made use of a good variety of spices and herbs, including a few that will be familiar to modern cooks for example thyme, rue and asafoetida. During the succeeding few centuries, the powerful and rich competed to lay on the most extravagent meals, and as a result the best cooks and their collection of recipes increased in prestige. Notwithstanding that, it was during the 1800s that formal cookery and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, testing, and publishing the recipes of their peers. Like it or not, the introduction of TV gave us TV cooks and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to search through massive numbers of recipes such as those found on this recipe site. |
