The History of Recipes
Academics have traced the existence of recipes back into ancient history, at least as far into history as the ancient Egyptians, and maybe further still. Interesting though that maybe, mostly, these early records were just very simple hieroglyphic recipes for preparing food.
Fascinatingly, the oldest recipe found, according to experts in ancient history is a collection of clay tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `blissful`. Progressing into The time of the romans 25BC a man called Apicius created some documents detailing recipes cooked by his fellow Romans. In his scrolls, he tells us how the meals were split into hors d`oeuvre, entrees and desserts, a style of dining still practiced today. He also tells us how the cooks of Roman times made use of a good variety of spices and herbs, including a few you will know for example thyme, mint and asafoetida. In the 15th century, knights returning from the crusades brought back many spices and herbs from the Middle-East, including basil and coriander. The introduction of these new herbs and spices prompted a surge in books on cookery, many of which are kept safe in private libraries. Over the next few centuries, the rich families of the West competed to offer the most exotic banquets, and as a result the best cooks and their recipe collections increased in prestige. Even so, it wasn`t until the 1800s that fine cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, testing, and writing down recipes common in their social group. By the arrival of the twentieth century, cooking publications were in great demand, mostly due to increased literacy, more leisure time and a general increase in wealth. The introduction of television brings us TV cookery programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes such as those found on this recipe site. |
