The History of Recipes
Written recipes as a concept can be observed way back into history, in truth as far back into history as ancient Egypt, and maybe further still. Interesting though that maybe, generally, these early cookbooks were just primitive hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the most ancient recipe found, according to Professor Solomon Katz, are some stone tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. As we move into The time of the roman empire 25BC a roman called Apicius wrote some documents which described recipes prepared by his fellow Romans. In his works, he tells us how the roman meals were split into hors d`oeuvre, main course and dessert, something we still use today. Aspicius describes how the Roman cooks were skilled in the use of many spices and herbs, including a few that are still present in modern kitchens for example thyme, rue and parsley. In the 15th century, people returning from the crusades brought back many new foods and spices from the Middle-East, such as coriander, basil and rosemary. The introduction of these new tastes prompted an increase in manuscripts on food, many of which are kept safe in private collections. By the arrival of the twentieth century, cook books are increasing in popularity as a result of increased literacy, people having more free time and being a little richer. The introduction of television gave us celebrity chefs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting us all to access massive numbers of recipes like the ones you can find on this site. |
