The History of Recipes
Recipes as a concept can be found way back into ancient history, in fact as far as the early Egyptians, and maybe even further. Having said that, mostly, these early records were just very simple hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the most ancient recipe discovered so far, according to food historians are some stone tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. Progressing into Roman times 25BC a man called Apicius compiled some documents showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he tells us how the roman meals were split into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. Additionally, he tells us how the ancient chefs were skilled in the use of many different aromatic flavors, including a few that are still present in modern kitchens like basil, fennel and parsley. Over the succeeding few centuries, the wealthy families of Europe strove to lay on the best banquets, and because of this chefs and their recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, trying out, and recording recipes that were common in the better off homes of the day. When we get to the twentieth century, recipe books were starting to become popular due to higher levels of literacy, leisure time and having more money to spend. The TV revolution brought us celebrity TV chefs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to access massive numbers of recipes like those on sites such as this. |
