The History of Recipes
It is quite possible to track the history of transcribed cooking instructions far back into distant history, in truth as far back into recorded history as the Egyptians, and possibly even further. However, sadly, these old recipes were just primitive hieroglyphic recipes for meal preparation.
The truth of the matter is, the most ancient recipe discovered, according to Professor Solomon Katz, are a few clay tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. As we move into Roman times around 25BC a roman called Apicius wrote a few documents which described recipes prepared by his fellow Romans. In his works, Apicius describes how the meals were divided into appetizers, entrees and desserts, a very modern way of dining. Aspicius informs us how the Roman chefs were skilled in the use of many different herbs, including many that are still in use today such as basil, rue and asafoetida. During the following few centuries, the powerful and wealthy tried to serve the best banquets, and consequentially chefs and their recipes were greatly in demand. Nevertheless, it was during the 1800s that cookery and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collating, verifying, and recording recipes for their fellow cooks to enjoy. By the advent of the 1900s, cook books were increasing in popularity due to better eduction, more spare time and being a little richer. Like it or not, the introduction of TV gave us celebrity chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes like those on the site you are now reading. |
