The History of Recipes
Recipes as a concept can be traced way back into antiquity, certainly as far back into history as the Egyptians, and possibly even further than that. However, these, ancient recipes were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the oldest recipe in existence, according to historians is a series of tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Progressing into Roman times 25BC a roman called Apicius compiled a number of documents detailing recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, a style of dining still practiced today. This early Roman chef informs us how the ancient cooks were skilled in the use of many aromatic flavours, including a few that will be familiar to modern cooks for example thyme, mint and dill. Over the succeeding few hundred years, the rich and powerful families of Wesstern Europe competed to serve the best banquets, and as a consequence, cooks and their collection of recipes were much in demand. Nevertheless, it wasn`t until the nineteenth century that formal cookery and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collecting, trying out, and publishing the recipes of their peers. The TV revolution brings us TV cooks and the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing us all to access massive numbers of recipes like the ones you can find on our site. |
