The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into antiquity, in truth as far back into recorded history as ancient Egypt, and maybe even further. However, sadly, these early recipes were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the most ancient recipe found, according to Professor Solomon Katz, is a collection of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. As we move into The time of the roman empire around 25BC a roman called Apicius wrote some scripts which described recipes prepared by his fellow Romans. In his scrolls, he describes how the meals of wealthy Romans were split into starters, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the early Romans used a wide range of herbs and spices, including some familiar names such as thyme, mint and asafoetida. In the 15th century, people returning from the crusades brought back many new foods and herbs from the Middle-East, including spices such as parsley, basil and rosemary. These new herbs and spices was responsible for an explosion in books on cookery, the majority of which are now in private cookery archives. The arrival of TV gave us celebrity chefs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes just like those on our web site. |
