The History of Recipes
It is possible to read the history of `recipes` far back into antiquity, in fact as far back into recorded history as early Egypt, and maybe further still. Interesting though that is, in the main part, these early cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe discovered, according to historians is a collection of tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Later on, in The time of the roman empire 25BC a roman called Apicius wrote some scripts showing how to cook the recipes prepared by his fellow Romans. In his scrolls, he recounts how the meals were divided into hors d`oeuvre, main meal and afters, something we still use today. Aspicius informs us how the Roman cooks made use of many aromatic flavors, including a few you will know like thyme, mint and asafoetida. Later, in the fifteenth century, people returning from the crusades brought back many new foods and herbs from the holy lands, including basil and rosemary. These new foods and tastes caused an explosion in manuscripts on food, most of which are kept safe in private cookery archives. For the decades that followed, the powerful and wealthy houses strove to serve the most extravagent meals, and consequentially the best cooks and their collection of recipes were greatly in demand. However, it wasn`t until the 19th century that formal cookery and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, trying out, and writing down recipes to help cooks of their time. By the time we get to the 1900s, cook books are starting to become popular mostly as a result of better eduction, people having more leisure time and having more money. The arrival of television gave us celebrity TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting us all to search through massive numbers of recipes like the ones you can find on sites such as this. |
