The History of Recipes
We are able to trace the history of written recipes far back into history, certainly as far as pharonic Egypt, and potentially, even further back. However, sadly, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
In fact, the oldest recipe found, according to experts are some tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Later on, in The time of the roman empire 25BC a roman called Apicius created some documents detailing recipes cooked by wealthy Romans. In his publication, he tells us how the meals were split into hors d`oeuvres, entrees and dessert, something that is very familiar to us today. Aspicius also tells us how the Roman chefs were skilled in the use of a wide range of herbs, including a few that will be familiar to modern cooks such as thyme, rue and parsley. For the decades that followed, the powerful and rich competed to serve up the most exotic meals, and as a result the best cooks and their recipe collections became highly prized. Nevertheless, it wasn`t until the 1800s that fine cookery and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to assembling, verifying, and publishing popular recipes of the day. By the time we get to the 1900s, cookbooks were in great demand, mostly as a result of increased literacy, people having increased free time and disposable income. |
