The History of Recipes
Food historians have traced the existence of recipes back into the distant past, in truth as far back as the early Egyptians, and maybe even further. However, sadly, these early cook books were just very simple hieroglyphic recipes for food preparation.
Fascinatingly, the most ancient recipe discovered so far, according to historians is a series of stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. As we move into The time of the roman empire 25BC a man called Apicius assembled a number of documents which described recipes cooked by his fellow Romans. In his works, he describes how the meals were split into appetizers, main meal and desserts, something that is very familiar to us today. Additionally, he tells us how the ancient Romans made use of a good variety of spices and herbs, including a few you will know like thyme, fennel and dill. Over the following few hundred years, the powerful families of Wesstern Europe tried to offer the most exotic banquets, and because of this chefs and their recipes were greatly in demand. Nevertheless, it was during the 19th century that fine cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collecting, testing, and writing down recipes to help cooks of their time. By the arrival of the 20th century, recipe publications were starting to become popular due to higher levels of literacy, increased leisure time and having more money. |
