The History of Recipes
It is possible to follow the history of written recipes back into antiquity, in truth as far into history as the Egypt of the Pharoahs, and quite possibly further than that. However, in the main part, these old recipes were just very simple hieroglyphic recipes for preparing food.
In fact, the most ancient recipe discovered, according to historians are a few stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Progressing into The time of the roman empire 25BC a man called Apicius compiled a collection of documents which described recipes cooked by wealthy Romans. In his works, he describes how the meals were split into hors d`oeuvres, entrees and desserts, a style of dining still practiced today. Aspicius recounts how the Romans used a wide range of spices and herbs, including a few that will be familiar to modern chefs such as thyme, rue and asafoetida. For the centuries that followed, the powerful families of Europe tried to serve up the most extravagent banquests, and consequentially the best chefs and their recipe collections were greatly in demand. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and publishing recipes for their fellow cooks to enjoy. By the time we get to the 20th century, cooking books were starting to become popular as a result of better eduction, people having increased free time and having more money. |
