The History of Recipes
We are able to track the history of meal recipes far back into history, in fact as far as the early Egyptians, and quite possibly further than that. Interesting though that is, mostly, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the most ancient recipe found, according to experts is a collection of tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Later on, in The time of the roman empire around 25BC a roman called Apicius wrote a number of scripts showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into appetizers, main course and afters, a style of dining still practiced today. This early Roman chef describes how the Roman chefs were skilled in the use of many aromatic flavors, including a few you will know like thyme, fennel and asafoetida. During the following few hundred years, the powerful and rich houses strove to lay on the most exotic banquets, and as a result the best cooks and their collection of recipes became highly prized. However, it was during the nineteenth century the formal cooking and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, trying out, and publishing recipes to help cooks of their time. By the time we get to the 1900s, cook books are starting to become popular due to increased literacy, more leisure time and disposable income. |
