The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into the far past, in fact as far back as ancient Egypt, and possibly even further. In practice though, sadly, these old records were just very basic hieroglyphic recipes for meal preparation.
Interestingly, the most ancient recipe discovered, according to food historians are a few ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. As we move into The time of the romans 25BC a roman called Apicius created a number of documents showing how to cook the recipes cooked by the Romans. In his publication, Apicius describes how the roman meals were separated into starters, entrees and afters, a very modern way of dining. He also informs us how the chefs of Roman times made use of many aromatic flavors, including a few that will be familiar to modern chefs like basil, fennel and dill. Closer to modern times, we find some interesting books which appeared in the 1300s - a book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are a little misleading though, they are nothing to do with the spicy food that we all know today, but rather accounts of the types of meals prepared for the rich and powerful of the time. Later, in the 15th century, people returning from the crusades brought us a variety of foods and herbs from the holy land, including spices such as coriander, parsley, and rosemary. The introduction of these new herbs and spices created a surge in manuscripts on cooking, the majority of which still exist in academic collections. By the advent of the 20th century, cookbooks are starting to become popular due to more people being able to read, increased leisure time and having more money to spend. The revolution that is television gave us celebrity TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes such as those found on sites such as the one you are reading now. |
