The History of Recipes
Recipes as an idea can be observed back into antiquity, certainly as far back into history as the early Egyptians, and maybe further still. Interesting though that is, mostly, these old recipes were just basic pictorial instructions for preparing food.
In an interesting twist, the oldest recipe discovered so far, according to experts in ancient history is a collection of stone tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. As we move into The time of the roman empire around 25BC a man called Apicius compiled a collection of scripts detailing recipes enjoyed by the Romans. In his works, he recounts how the meals were separated into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the ancient Romans used many different herbs, including a few that are still present in modern kitchens such as thyme, fennel and dill. In the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab cuisine, including basil and rosemary. These new foods and tastes prompted a torrent in manuscripts on food, the majority of which still exist in private libraries. Over the next few hundred years, the wealthy families of the West competed to serve up the most exotic banquets, and because of this the best cooks and their collection of recipes increased in prestige. However, it wasn`t until the nineteenth century that formal cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collating, verifying, and recording recipes for their fellow cooks to enjoy. When we get to the 1900s, cooking books were highly popular due to higher levels of literacy, people having more spare time and a general increase in wealth. The arrival of TV brought us TV cooks and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes like those on the site you are now reading. |
