The History of Recipes
Transcribed cooking instructions as a concept can be traced far back into distant history, in fact as far back as the ancient Egyptians, and maybe further still. Interesting though that is, generally, these ancient recipes were just simple hieroglyphic recipes for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to historians are some ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. As we move into The time of the roman empire 25BC a roman called Apicius wrote some scripts which described recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvre, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the cooks of Roman times made use of many herbs and spices, including many that are still in use today such as basil, mint and parsley. As our culinary historical trip moves to more modern times we find a couple of interesting cookery books dating from the 14th Century - one book titled `Forme of Cury`, and another named `Curye on Inglish`. Although the titles sound familiar, these have no connection with the indian curry that is served today, but instead accounts of the types of meals on the tables of the upper classes of the time. In the 15th century, people returning from the crusades brought back many new foods, spices and herbs from Arab cooking, including coriander, parsley, and rosemary. The introduction of these new herbs and spices prompted an outbreak in books on cooking, the majority of which are kept safe in private cookery archives. By the arrival of the twentieth century, cook books are increasing in popularity due to more people being able to read, people having more leisure time and having more money. |
