The History of Recipes
Food historians have traced the existence of recipes far back into the far past, at least as far back into history as early Egypt, and maybe even further. However, these, old cookbooks were just very basic hieroglyphic recipes for meal preparation.
Fascinatingly, the oldest recipe in existence, according to experts is a series of stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire around 25BC a roman called Apicius compiled a few scripts detailing recipes cooked by his fellow Romans. In his works, Apicius tells us how the roman meals were divided into starters, entrees and afters, a style of dining still practiced today. This early Roman chef recounts how the Roman chefs used a good variety of aromatic flavors, including a few that will be familiar to modern cooks like basil, fennel and dill. In the 15th century, people returning from the crusades brought us many spices and herbs from Arab cooking, such as rosemary and coriander. The introduction of these new herbs and spices was responsible for an outbreak in cookery books, many of which are kept safe in private libraries. Over the following few centuries, the rich and powerful families of Wesstern Europe competed to offer the most exotic banquets, and as a consequence, cooks and their recipe collections became highly prized. Even so, it was during the 1800s the formal cooking and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collecting, trying out, and publishing recipes to allow everyone to enjoy them. The arrival of TV brings us TV cookery programs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, allowing us all to search through thousands of recipes such as those found on sites such as this. |
