The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions back into the distant past, in fact as far back as early Egypt, and potentially, even further back. However, sadly, these early recipes were just very basic pictorial recipes for preparing meals.
Interestingly, the most ancient recipe discovered, according to food historians is a series of tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. Later on, in Roman times 25BC a roman called Apicius created a number of documents showing how to cook the recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals were split into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the early Romans used a good variety of herbs, including a few that will be familiar to modern cooks like basil, rue and dill. Closer to modern times, we find some books which appeared in the fourteenth century ; a cookery book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Amusingly, these are nothing to do with the indian food that is served today, but instead descriptions of the types of meals cooked for the rich and wealthy people of that time. In the fifteenth century, people returning from the crusades brought back a variety of foods and herbs from the holy lands, including spices like basil and coriander. These new spices and herbs caused a surge in recipe manuscripts, the majority of which are now in academic collections. During the succeeding few centuries, the families of Europe strove to serve up the most exotic meals, and consequentially the best chefs and their recipe collections were at a premium. Even so, it wasn`t until the 1800s that haute cuisine and cookery books became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collecting, verifying, and publishing recipes to allow everyone to enjoy them. By the arrival of the 1900s, cookbooks were greatly in demand mostly as a result of better eduction, people having increased free time and having more money to spend. Like it or not, the introduction of television gave us TV chefs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of the internet, permitting everybody to access thousands of recipes such as those found on the site you are now reading. |
