The History of Recipes
Written cooking instructions as a concept can be observed back into distant history, at least as far into history as pharonic Egypt, and possibly even further. However, generally, these old cook books were just simple pictorial instructions for preparing food.
During Roman times around 25BC a roman called Apicius created some documents detailing recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals were split into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the Roman chefs used a wide range of aromatic flavours, including many that are still in use today like thyme, fennel and parsley. In the fifteenth century, people returning from the crusades brought back many spices and herbs from the holy land, such as parsley, basil and rosemary. These new spices and herbs prompted an explosion in recipe publications, the majority of which are now in private cookery archives. By the arrival of the 20th century, cookbooks are in great demand, mostly due to better eduction, people having more free time and having more money to spend. |
