The History of Recipes
We can read the history of meal recipes way back into history, in fact as far back as pharonic Egypt, and possibly even further. Having said that, mostly, these early cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe found, according to experts is a series of tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. Later on, in Roman times around 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes cooked by the Romans. In his scrolls, he tells us how the roman meals were split into hors d`oeuvre, main meal and desserts, something we still use today. Additionally, he recounts how the cooks of Roman times made use of many different herbs, including some that we all recognise for example thyme, mint and asafoetida. Later on, there were some interesting books which were published in the 1300s - a recipe book called `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, these have no connection with the indian curry that is familiar to us all today, but rather accounts of the types of food cooked for the rich and wealthy people of those days. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and spices from the Middle-East, such as coriander, basil and rosemary. The introduction of these new foods and spices prompted an explosion in books on cooking, most of which still exist in private cookery archives. By the advent of the twentieth century, cookery publications are greatly in demand as a result of increased literacy, more free time and disposable income. The introduction of the TV brings us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, allowing everybody to search through massive numbers of recipes like those on the site you are now reading. |
