The History of Recipes
Written cooking instructions as an idea can be traced far back into distant history, certainly as far as the early Egyptians, and potentially, even further back. Having said that, generally, these old cook books were just very basic pictorial instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to experts are a few tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. As we move into Roman times around 25BC a roman called Apicius compiled a number of documents showing how to cook the recipes cooked by his fellow Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvre, entrees and afters, something we still use today. He also describes how the early Romans were skilled in the use of a wide range of aromatic flavors, including a few that will be familiar to modern chefs like bay, rue and asafoetida. Moving on, there were some interesting books dating from the fourteenth century : a recipe book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Although the titles sound familiar, these are nothing to do with the curry that is familiar to us all today, but instead recipes for the types of meals eaten by the nobility of that period. Later, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from Arab cuisine, including parsley, basil and rosemary. The introduction of these new herbs and spices prompted a surge in manuscripts on cooking, most of which are kept safe in private collections. By the advent of the 1900s, cookery books were greatly in demand mostly due to higher levels of literacy, people having increased free time and disposable income. The revolution that is television brings us TV chefs and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, permitting everybody to access massive numbers of recipes just like those on sites such as the one you are reading now. |
