The History of Recipes
Experts have found proof that recipes existed back into antiquity, in fact as far as ancient Egypt, and potentially, even further back. However, generally, these old cook books were just very basic hieroglyphic instructions for preparing food.
Interestingly, the most ancient recipe found, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `exhilarated, wonderful and blissful`. During Roman times 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by wealthy Romans. In his scrolls, Apicius recounts how the roman meals were split into starters, main meal and dessert, a style of dining still practiced today. Additionally, he describes how the chefs of Roman times used a good variety of herbs, including some that we all recognise such as thyme, mint and asafoetida. Closer to modern times, there are two books which appeared in the fourteenth century ; a recipe book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, they are unconnected to the indian food that is popular today, but instead recipes for the types of meals on the tables of the rich and powerful of those days. In the fifteenth century, the Crusaders brought back many new foods and herbs from the East, including spices like parsley and basil. These new foods and spices was responsible for an eruption in publications on food, many of which are now in private libraries. By the arrival of the 1900s, cooking books were starting to become popular mostly as a result of increased literacy, people having increased leisure time and being a little richer. |
