The History of Recipes
It is quite feasible to follow the history of written cooking instructions back into history, at least as far back into recorded history as the ancient Egyptians, and possibly even further. Interesting though that is, sadly, these early recipes were just very simple pictorial recipes for preparing meals.
Interestingly, the oldest recipe discovered so far, according to experts is a collection of ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire around 25BC a man called Apicius compiled some scripts describing recipes enjoyed by his fellow Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, a very modern way of dining. Aspicius recounts how the ancient cooks used a good variety of spices and herbs, including a few that are still present in modern kitchens such as basil, rue and asafoetida. In the 15th century, knights returning from the crusades brought us many foods and herbs from the holy lands, such as coriander, parsley, basil and rosemary. The introduction of these new herbs and spices created a torrent in manuscripts on cooking, the majority of which are kept safe in academic collections. Over the following few centuries, the rich families of Europe competed with each other to serve the most extravagent meals, and consequentially cooks and their collection of recipes were greatly in demand. Even so, it wasn`t until the nineteenth century that cooking and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, testing, and recording recipes for their fellow cooks to enjoy. The arrival of TV brought us cooking programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing everyone to access thousands of recipes such as those found on this site. |
