The History of Recipes
Written recipes as an idea can be observed far back into ancient history, in fact as far into history as early Egypt, and possibly even further than that. Having said that, generally, these early records were just basic hieroglyphic recipes for preparing meals.
In an interesting twist, the most ancient recipe discovered so far, according to academics is a collection of clay tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. Much later, in Roman times a roman called Apicius compiled some scripts showing how to cook the recipes cooked by wealthy roman citizens. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvres, main course and dessert, a very modern way of dining. Aspicius describes how the Roman chefs were skilled in the use of many different aromatic flavors, including a few that will be familiar to modern chefs for example basil, mint and asafoetida. Later on, in the 15th century, people returning from the crusades brought us a variety of foods and herbs from Arab cuisine, such as coriander, parsley, and rosemary. The introduction of these new foods and spices created a torrent in recipe manuscripts, the majority of which still exist in academic collections. Over the succeeding few hundred years, the rich and powerful families of the West strove to offer the most extravagent meals, and because of this cooks and their recipes were at a premium. Nevertheless, it wasn`t until the nineteenth century that fine cookery and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to assembling, trying out, and publishing the recipes of their peers. When we get to the twentieth century, cookery books were greatly in demand mostly as a result of higher levels of literacy, people having more free time and having more disposable income. The TV revolution gave us TV chefs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes like those on sites such as this. |
