The History of Recipes
Recipes as a concept can be observed way back into distant history, certainly as far back into history as ancient Egypt, and possibly even further. Having said that, sadly, these early cook books were just simple pictorial recipes for preparing food.
Fascinatingly, the oldest recipe discovered so far, according to Professor Solomon Katz, is a collection of ancient tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. As we move into The time of the roman empire around 25BC a roman called Apicius compiled a number of documents showing how to cook the recipes prepared by the Romans. In his works, he tells us how the roman meals were split into appetizers, entrees and afters, something we still use today. This early Roman chef tells us how the early Romans made use of a good variety of spices and herbs, including a few you will know such as thyme, mint and asafoetida. Over the next few hundred years, the rich and powerful families of Wesstern Europe strove to lay on the best banquets, and as a result chefs and their collection of recipes were at a premium. However, it was during the 1800s the formal cooking and recipe books became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, testing, and writing down recipes for their fellow cooks to enjoy. When we get to the 1900s, cookery books were starting to become popular due to increased literacy, more spare time and having more disposable income. |
