The History of Recipes
Transcribed cooking instructions as an idea can be found way back into antiquity, at least as far back as the ancient Egyptians, and maybe further still. Having said that, in the main part, these early records were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the oldest recipe discovered, according to experts in ancient history is a collection of clay tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Much later, in Roman times a roman called Apicius compiled a number of documents detailing recipes cooked by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into starters, main course and dessert, a very modern way of dining. Aspicius also tells us how the Roman cooks made use of a wide range of aromatic flavours, including some familiar names for example bay, mint and asafoetida. Over the succeeding few hundred years, the rich and powerful families of Wesstern Europe competed to serve up the most exotic meals, and consequentially the best cooks and their recipes increased in prestige. Nevertheless, it was during the nineteenth century that formal cookery and recipe books rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to assembling, trying out, and writing down recipes common in their social group. When we get to the twentieth century, cookery books were in great demand, mostly due to better eduction, people having more spare time and a general increase in wealth. |
