The History of Recipes
Academics have traced the existance of recipes way back into history, in truth as far back into history as early Egypt, and potentially, even further back. However, sadly, these old cookbooks were just very basic pictorial instructions for meal preparation.
During Roman times around 25BC a roman called Apicius compiled a collection of documents which described recipes enjoyed by the Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvre, main meal and afters, a very modern way of dining. He also informs us how the Roman cooks made use of a good variety of herbs, including some familiar names for example bay, fennel and parsley. During the succeeding few hundred years, the upper-class families of the West tried to serve up the most extravagent meals, and consequentially the best chefs and their recipe collections were at a premium. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, verifying, and writing down recipes of the day. By the arrival of the 20th century, cookery publications are increasing in popularity mostly as a result of better eduction, people having increased leisure time and having more disposable income. |
