The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions back into distant history, in fact as far as the Egypt of the Pharoahs, and potentially, even further back. Having said that, sadly, these ancient recipes were just basic hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe discovered, according to academics are a few clay tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. As we move into The time of the roman empire 25BC a roman called Apicius compiled a few documents detailing recipes cooked by the Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and dessert, a very modern way of dining. Aspicius tells us how the cooks of Roman times were skilled in the use of many spices, including a few that will be familiar to modern cooks for example thyme, mint and dill. As our culinary historical trip moves on a few more years there were two recipe books which appeared in the 1300s - a cookery book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are somewhat misleading tho`, these books are nothing to do with the indian food that we all know today, but rather recipes for the types of food on the menues of the rich and powerful of the period. In the fifteenth century, people returning from the crusades brought us many foods and herbs from the holy land, including spices such as coriander, parsley, and rosemary. These new foods and tastes caused an outbreak in recipe publications, the majority of which are now in private collections. By the arrival of the 20th century, cookery publications are in great demand, mostly as a result of better eduction, leisure time and having more disposable income. The introduction of television brings us TV cookery programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes like the ones you can find on this web site. |
