The History of Recipes
Written recipes as a concept can be found back into the far past, in fact as far back into history as the Egyptians, and possibly even further than that. In practice though, generally, these ancient records were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the most ancient recipe discovered so far, according to experts in ancient history are some ancient tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. During the time of the Romans a man called Apicius created a few documents showing how to cook the recipes enjoyed by his fellow Romans. In his publication, Apicius recounts how the meals were separated into hors d`oeuvre, main course and afters, a style of dining still practiced today. This early Roman chef tells us how the ancient Romans made use of many spices, including a few that will be familiar to modern cooks for example thyme, rue and asafoetida. Moving our culinary historical trip onwards, we have some books from the 14th Century : a book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Don`t be fooled by the titles though, these are not about the curry that is popular today, but rather accounts of the types of food prepared for the upper classes. Later on, in the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, such as coriander, parsley, basil and rosemary. These new culinary innovations prompted a torrent in manuscripts on food, many of which are now in private cookery archives. When we get to the 20th century, cooking publications are greatly in demand due to higher levels of literacy, more free time and a general increase in wealth. |
