Ingredients
1 tsp Unflavored gelatin
2 tbsp Water, cold
1 cup Water, boiling
1 tbsp Lemon Juice
3 Saccharin tablets, (1/4 grain each)
1/2 cup Fruit Cocktail, drained (DP)
Directions
Sprinkle gelatin over cold water; let stand 5 minutes. Add boiling
water; stir until dissolved. Add lemon juice and saccharin. Chill
until mixture begins to set. Beat until fluffy with rotary beater;
fold in fruit cocktail. Chill until firm. NOTE: Other
dietetic-packed Fruit may be substituted for fruit cocktail.
Liquid drained from fruit may be brought to boil and substituted
for boiling water.
For jellied Fruit Salad, omit beating, if preferred.

The History of Recipes
It is quite possible to prove the history of recipes far back into the far past, in fact as far back as the Egypt of the Pharoahs, and possibly even further. Interesting though that is, generally, these old recipes were just basic pictorial instructions for food preparation.
During Roman times 25BC a roman called Apicius created a number of documents showing how to cook the recipes cooked by the Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into starters, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the Roman chefs were skilled in the use of a good variety of herbs, including a few that will be familiar to modern cooks for example basil, mint and parsley. During the succeeding few centuries, the families of Europe strove to offer the most extravagent banquests, and as a result chefs and their recipes were much in demand. However, it was during the 1800s the formal cooking and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, verifying, and publishing the recipes of their peers. By the arrival of the 1900s, cookbooks were greatly in demand as a result of increased literacy, increased leisure time and having more money. |
