The History of Recipes
Experts have tracked the existence of recipes far back into the distant past, in fact as far back as ancient Egypt, and maybe even further. Interesting though that is, sadly, these old cookbooks were just very basic pictorial instructions for preparing meals.
As we move into The time of the roman empire 25BC a roman called Apicius created a few documents showing how to cook the recipes cooked by the Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into appetizers, entrees and dessert, something we still use today. Additionally, he tells us how the ancient Romans used a good variety of herbs, including a few that will be familiar to modern chefs for example bay, mint and parsley. Over the next few centuries, the upper classes strove to offer the most exotic meals, and consequentially chefs and their collection of recipes could command a high salary. However, it was during the 1800s that formal cookery and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collecting, verifying, and publishing recipes common in their social group. By the arrival of the twentieth century, cookbooks were greatly in demand mostly due to better eduction, increased leisure time and a general increase in wealth. |
